Koulourades is a Greek company that through a wide range of products has managed to revolutionize and transform the classic and traditional bun of Thessaloniki into a modern daily habit. It is active in the production of fresh Thessaloniki pretzels and makes breakfast for more than 150,000 consumers in its network of more than 110 stores in Greece and soon abroad.

The success of Koulourades is due to the long tradition of the product (Byzantine Empire era). In particular, the Koulourades recipe has been around for 63 years (since 1956). Loved by traditional families, in 2015 it took the form we all know today.

The company’s goal is to serve the needs of consumers with traditional flavors (simple pretzel of Thessaloniki) as well as variations of these (stuffed pretzels with apple and cinnamon, chocolate and wild cherry, cream cheese and more). In this way Koulourades manage to balance between traditional and modern and make breakfast for all tastes!
Another important reason that encourages consumers to choose us is the nutritional value of the products. Without sacrificing taste, the products are suitable for those on a diet, as they contain no fats and are rich in beneficial properties due to the sesame. They also provide tasty solutions during periods of fasting.

A few words…

Thessaloniki pretzel began to be made in Thessaloniki by refugees who came from their lost homelands.Its history dates back to the Byzantine Empire and appears mainly in Constantinople and Thessaloniki.The word pretzel comes from the Byzantine word “kollikion”, which is mentioned in many Byzantine texts.

The occupation of baker-couloulouropoyo was mainly practiced by Greeks from Epirus. According to tradition, the shape of the head of the Epirotes is derived from the weight of the baskets of cookies that the sellers carried on their heads. It is also known that an Epirus mother wished her son, who, with a pat on the head, said: ‘Go to Istanbul and become a cookie maker’.

From midnight the craftsmen in the wood-fired ovens prepared the sourdough from bread yeast. Before dawn, the buns were ready and the smell of the baked sesame was a temptation for every passerby. The small vendors with their tabbas on their heads or with baskets poured into the streets from dawn and by 10-11 am they were selling out.

In the City the koulourtzides advertised their merchandise under the name “Thessaloniki pretzel”.
Much later, the same name was used by the kulourtzides of Athens, when they went out into the squares with their boards on their heads. Thus, it was the same craftsmen, producers and sellers who historically defined the ‘Thessaloniki pretzel’, which is so widespread in Greece today, with its familiar shape, abundant sesame and crispy taste.

The nutritional demands of consumers have led to the production of a variety of pretzels today: stuffed, with raisins, wholemeal, etc., but none of them can match the taste of a simple natural pretzel with sesame seeds.
Its main characteristic is the high quality sesame seeds. It does not contain any fatty substances and therefore, apart from the dietary approach, it is also a fasting product.
